2 dozen boiled eggs

Mash egg yolks...add a blob of Miracle Whip...a big squirt of mustard.  Then add 2-3 tbsp. vinegar, 2 tsp sugar, salt and pepper.  Taste and more of whatever is needed.

Corn Dip

Corn Dip

2 (15 oz) cans whole kernel corn, drained
2 cups grated cheddar cheese
1 cup mayo
1 cup green pepper, chopped
1/2 cup red onion, chopped
1 (10.5 oz) bag coarsely crushed Frito chili cheese corn chips

Mix first 5 ingredients and chill. Stir in corn chips just before serving.

Mexi Corn Dip

Mexi Corn Dip

3 cans mexi-corn (drained)
1 can of rotel (drained)
1 cup sour cream
1 cup mayo
1 cup shredded onion
chopped green onion

Mix all in bowl and let sit overnight.  Stir and serve with chips.

Pineapple Cream Cheese Ball

Pineapple Cream Cheese Ball

16 oz cream cheese, softened
1/4 cup bell peppers, diced
2 tbsp onions, chopped
1 tbsp seasoning salt
2 cups pecans, chopped
1 can crushed pineapple, drained

Combine all ingredients, saving some pecan to roll cheese ball in.
Pack mixture into a bowl or mold, chill until firm.
Remove and roll in pecans to coat exterior.
Serve with crackers.

Mexican Cheese Dip

Mexican Cheese Dip

1 block velveeta cheese dip
1 can rotel
1 can diced tomatoes
1 can black olives (chopped)
1 medium onion, diced
1 lb  ground beef (sometimes she adds 1/2 lb ground pork sausage too)
Garlic Powder

Brown and crumble beef (season with salt, pepper, and garlic powder).

In a large sauce pan, add rotel, tomatoes, onion, and start heating while cutting velvetta into chunks and chucking into the pan.  Stir constantly to keep from scorching.  Before completely melted add beef and black olives.  Continue to stir until fully mixed and melted.  Serve with your favorite chips and enjoy.

Curry Dip


Curry Dip

Granny Lois makes this dip nearly every year for Christmas Eve.  The recipe was given to her by her 1st cousin Jean Coates.


1 cup sour cream

1 cup mayo

1 (2oz) Good Season Italian dressing mix

1 tsp thyme

1 ½ t curry powder

½ tsp salt

2 Tbsp vinegar

2 tbsp oil

 

Mix together and chill before serving with sliced veggies.

BLT Pinwheels

Pinwheels are easy to make and are great for parties.  I made these for our Pre Trick or Treating party Friday.

BLT Pinwheels

1 block cream cheese, softened
1/2 cup mayo
20 slices of crispy bacon, crumbled
diced tomatoes
shredded lettuce
flour tortillas

Mix the cream cheese and mayo with the mixer.  Stir in the bacon.

Spread the cream cheese mixture on a tortilla, add lettuce and tomatoes.  Rolls up.  Slice into 1 inch pieces.

Corn Chile Dip

I found this idea on a blog but I can't recall which one.  I don't have a Trader Joe's store in our area so my cousin Arna who lives in California went to her store and mailed a few jars of this Corn and Chile Salsa to me.

Corn Chile Dip

1 block cream cheese softened
1/2 jar Corn Chile Salsa

Put block of softened cream cheese in  your mixer and beat it up.  Stir in corn chile salsa.  Serve with Frito chips or Tortilla Chips.

Mozzarella Cheese Ball

My Mom used to make a cheese ball for  holiday gatherings with chipped beef, but I'm not overly fond of that kind of beef.  I found this cheese ball recipe on Pinterest and made it for the office Christmas party.  It was a hit!

I made the cheese ball the day before I needed it.  I just put it in a glass container with a lid.  I served it from that bowl but you could also plop it out on a pretty serving plate.

Mozzarella Cheese Ball

8 oz package cream cheese, softened
1/2 package (4 1/2 tsp) dry ranch dressing mix
1/3 cup mayonnaise
2 cup shredded mozzarella cheese
finely chopped pecans

 With an electric mixer, combine the first 3 ingredients.  Fold in the shredded mozzarella cheese.  Form mixture into a ball and roll in chopped pecans.  Refrigerate before serving with crackers.

Fruit Salsa with Cinnamon Chips

Fruit Salsa with Cinnamon Chips

2 cups of fresh strawberries
2 granny smith apples
2 kiwi
2 tbsp brown sugar
2 tbsp apple jelly
Juice from an orange (I also put the orange pieces in)

Clean and cut all fruit into small (really small) pieces.  Mix brown sugar, apple jelly, and orange juice together.  Pour over fruit and mix.

Cinnamon chips:
10 flour tortillas (8 inches)
1/4 cup butter, melted
1/3 cup sugar
1 tsp ground cinnamon

Brush chips with butter and sprinkle on cinnamon-sugar.  Cut each tortilla in eight wedges.  Place on ungreased baking sheet.  Bake at 350 for 5-12 minutes or until just crisp.  (my oven took 12 but watch because they are easy to burn.)  Serve with the fruit salsa.
