Dr Pepper Cake

This is my new all time favorite chocolate cake -- so very moist and delicious.  I found this on a blog, and it was for cupcakes.  But the recipe works fine for a 9x13 cake pan.

I did not care for the icing on the blog...and I've tried making another recipe and it wasn't quite right so that part of the recipe is still to be perfected.

Dr. Pepper Chocolate Cake

Ingredients:
1- 15.25 oz Boxed Cake Mix, Devils' food flavored
3/4 cup buttermilk, room temperature
1/2 cup vegetable oil
3 large eggs, room temperature
1 cup Dr. Pepper
Instructions:
1. Preheat oven to 350 degrees F.  Spray a 9x13 cake pan with cooking spray.
2.  In the bowl of a stand mixer fitted with a paddle attachment, add chocolate boxed cake mix.  Mix on low speed to break up any clumps.  Add buttermilk and vegetable oil and mix on medium speed until flour mixture is moistened.
3.  Add eggs one at a time, making sure each egg is incorporated before adding the next.  Once all the eggs have been combined, slowly stream in Dr. Pepper with the mixer running on low.  Mix until combined.
4. Pour into the pan and bake according to the instructions on the cake mix box.

Bon Bons

This recipe for Bon Bons came from my Mother-n-Law, Lois.  Very easy to make and so good!  She kept these stored in the fridge and just put out on a pretty Christmas platter just before serving them.

Bon Bons
Source: Lois Dotson

2 1/2  boxes powdered sugar (16oz)
1 can Eagle brand milk
1 stick butter
1 box angel flake coconut
12 maraschino cherries - chopped

Mix well, roll into balls and chill.
Dip into melted chocolate almond bark.
Let cool/set up on waxed paper.

Cat Turds

Most people call these "Minute Cookies"....but my family isn't most people.  My brother started it really.  He came over one day and I had a batch of these cooling on waxed paper and he walked in and said it looked like I had cat turds cooling on the table.  So the name stuck and now we call them Cat Turds.

Cat Turds

Mix in a large skillet:
1 stick butter
2 cups sugar
1/2 cup milk
1/4 cup cocoa

Boil 1-2 minutes, remove from heat and add:
1/2 cup peanut butter
1 tsp vanilla
3 cups quick cook oats
**optional -- add a big spoonful of marshmallow fluff

Mix well and drop onto wax paper.  Let cool/set.

Huckies Cookies

When I lived at home I baked a lot.  My dad loved my baking and my Grandpa lived just up the road and he loved getting special deliveries of my homemade cookies, cakes, and other desserts.  I've made many cookie recipes...but this is my absolute favorite.  If I could only make one cookie, this would be it.

Cream:
1 cup sugar
1 cup brown sugar
1 cup shortening

Beat in:
2 eggs
1 tsp vanilla
1/2 tsp salt
1 tsp soda
2 cups sifted flour
3 tsp baking powder
2 cups oats
1 cup coconut
1 cup milk chocolate chips

Cook on a greased cookie sheet 10-12 minutes in a 350* oven.

Frozen Ice Cream Dessert

I can remember sitting in Huckie's kitchen eating this glorious dessert!  I loved it so much that I asked her for the recipe....I was probably only 12 years old at the time....and I was already collecting recipes.

Dirt Cake

It's amazing how many comments you get when you post on Facebook that you are making dirt cake (and pictures).  When I showed up at Aunt  Helen's house on Thanksgiving I had three different people ask....did you bring that dirt cake.  I have a feeling that if I hadn't I would have been in deep trouble!

Since it's such a family favorite, I'd best share it here on the blog so that it will make it into my cookbook whenever I get around to working on that.

Dirt Cake
1 package Oreos  (not double stuff)
1 8 oz Philadelphia Cream Cheese (softened)
1/2 cup butter
1 cup powdered sugar
1 large  container cool whip
2 boxes instant vanilla pudding
3 cups milk
1 tsp vanilla

Crust the entire package of Oreos and place about 2/3 of the crumbs in the bottom of a 9x13 pan.  Set aside.

Mix cream cheese and butter until smooth.  Add in powdered sugar and fold in whipped topping.  Mix well then set aside.

In a separate bowl, mix pudding milk and vanilla.  Then fold the mixture  into the cream cheese mixture.

Pour over the crumb mixture.  Sprinkle with reserved crushed Oreos. Keep refrigerated until ready to serve.

(you can decorate the cake by putting gummy worms on top also)

Chocolate Poke Cake

This is a family favorite.  It's a favorite of mine not only because it tastes awesome but because it's so quick and easy!

Chocolate Poke Cake

1 German Chocolate Cake Mix
1 can Sweetened Condensed Milk
1 (12 oz) jar caramel sauce (usually found with the ice cream toppings)
1 container cool whip
1 bag of Heath toffee bits or the Heath milk chocolate toffee bits

Cook the cake per box directions in a 9x13 pan.  Let cool for a few minutes then use a wooden spoon to poke holes about 1/2 way down. Shake the can of sweetened condensed milk then pour over the cake.  Then pour the caramel sauce over the cake. Let cake completely cool.  Top with cool whip and sprinkle toffee bits over the cake (using as many or as few as you like).

Chocolate Gravy

A lot of people have never had chocolate gravy….and if they haven’t they usually turn up their nose and think I’m crazy…but my Dad used to make it for me as a kid on Snow Days.  I’ve not had it since I was a kid.  I'm not exactly sure how Dad made his gravy; it wasn’t quite as good as Dad’s but was pretty close.  I don’t know if his recipe was different or if’s just the memory of my Dad making it.

Chocolate Gravy

1 ½ cups milk

1-2 Tbsp Cornstarch – add a little at a time to thicken

2 tbsp cocoa

½ cup sugar

Cook on medium heat until it boils.  Boil & let thicken.  Remove from heat and add 1 tsp vanilla.

Serve on hot biscuits.

Cherry Coke Chocolate Cake

For the Dotson Thanksgiving, I made a new recipe from the Tasty Kitchen website. And it was REALLY good!  I have plans to make it again, but this time doubling the amount of cherries to the cake.  Here's the recipe below if you'd like to try it.  Also, when I made the frosting, I added a little cherry juice to add flavor and color to the frosting.   Here is the link to Tasty Kitchen, go on over there and check out their yummy recipes!  http://tastykitchen.com/

Cherry Coke Chocolate Cake

1 jar (10 Oz) Maraschino Cherries, Drained, Reserve 1/4 Cup Juice

1 box (about 18-20 Oz. Box) Devil's Food Cake Mix
1 cup Cherry Coke
½ cups Vegetable Oil
3 whole Eggs
1 container (12 Oz) Whipped Vanilla Frosting
1 cup Marshmallow Creme
24 whole Maraschino Cherries With Stems, Drained Well, For Topping

Chop the jar of cherries, set aside. In a large bowl, mix cake mix, Cherry Coke, oil, eggs and reserved 1/4 cup cherry juice. Stir in chopped cherries. Pour batter into a 9×13 cake pan which has been sprayed with cooking spray. Bake at 350F for 35-40 minutes. Cool cake completely for about 1 hour. Mix together frosting and marshmallow creme to frost cake. Top cake with whole maraschino cherries.  Or dip cherries with stems in chocolate. Refrigerate cherries to set chocolate before putting them on the cake.
