Dairy Lane Chilli
Dairy Lane Chili
Granny Lois used to work at Dairy Lane when she was 16. Granny created
this recipe which is pretty close to their chili recipe. It’s good for chili dogs or frito pies or
sloppy joes. Or you can add beans and make chili out of it.
3 pounds lean hamburger meat (not cooked)
3 cups water
24 oz. bottle of ketchup
5 tbsp. chili powder – or 1 oz pkg of Williams’s chili power
Sugar, salt, and pepper to taste.
Throw every in crockpot and cook until thick 3-4 hours or 2 ½ hours on
high.
You may need to spoon off some liquid if it’s gets too runny.
If you like it hot, add 2 tsp cayenne pepper

2 cups chopped carrots, onions, and celery
2 bags frozen broccoli
1 tbsp. chicken bouillon (she suggests using the paste)
cover with water and cook until tender.
Add:
2 cups milk and make your rue with 1/2 cup butter and 1/2 cup flour
Add rue to soup along with 1 quart of half and half
Add 2. of the 3 lb. box of Velveeta cheese and stir constantly so it melts but doesn't stick.
Sprinkle white pepper over the entire pot.

Taco Soup
This yummy soup recipe is so good and so easy! My friend Deana shared the recipe with me. I'm so glad she did.
Taco Soup
1 can pinto beans
1 can kernel corn
1can rotel
1 envelope taco seasoning
1 envelope ranch dressing seasoning
Brown beef and drain then add taco seasoning and water, simmer until absorbed.
Serve with tortilla chips, shredded Mexican cheese, and sour cream.

1 can black beans1 can pinto beans

Easy White Chicken Chili
I whipped up a quick dinner for us tonight and it turned out to be really good. Pretty sure this will become a regular during the fall and winter months.
Easy White Chicken Chili
1 rotisserie chicken, pull the meat off the bone into small chunks
1 onion, diced
1 garlic clove, diced
olive oil
salt & pepper
2 cans (14 oz) of chicken broth
2 (15 oz) cans of white kidney beans, undrained
1 pkg McCormicks white chicken chili seasoning mix
In Dutch oven pour in a few tablespoons of olive oil, diced onions, diced garlic, and season with some salt and pepper. Cook until the onions are soft (a few minutes). Then add in all other ingredients, mix well and bring to boil then lower heat and simmer 20 minutes.

Mom's Hamburger Soup
Hamburger Soup
Source: Mom
1 pound ground beef
1 medium onion chopped
1 cup diced potatoes
1 cup sliced carrots
2 cups tomato juice
4 cups water
¼ cup cooked rice
¼ cup sugar
Brown ground beef and onion in skillet. Drain
fat. Place in large plan with other ingredients. Bring to a
boil. Simmer 1 hour or until done.
Good served with corn bread. Or fresh homemade bread.

Angel's Chili
When the temperature drops there is nothing like a pot of chili to warm you up. My Mom called me yesterday and told me that she had talked to my brother...he lives about 30 minutes north of us and got even more snow than we did. He was craving some chili....once he could get out they went to the store and he came home with $85 of groceries...but no chili beans...they were sold out! For some reason this cracked me up so I e-mailed him to see if he had any chili beans I could borrow. He e-mailed back and said I was a smart ass. Is that any way to talk to your baby sister??
This morning, Katie asked if she could see Kallen and Donnie. So I called him and asked if they wanted to come over for lunch and so the kids could play in the snow. I made a big pot of chili and some brownies. It was a hit, there's just enough chili over for one serving and we polished off the whole pan of brownies!
Angel's Chili

8 oz can tomato sauce
1or 2 8 oz cans of Rotel tomato sauce with chillies
16 oz can diced tomatoes
28 oz can tomato sauce
2 cans light red kidney beans, drained
1 tsp ground oregano
1 tbsp ground cumin
2 tbsp chili powder
In a large skillet, brown hamburger with garlic and onions. Season with salt and pepper. Drain any excess fat. Add the a can of tomato sauce and the spices. Transfer the hamburger into a large pot...add remaining tomatoes, sauce, and beans. Simmer for 1 hour.
Serve with grated cheddar cheese, diced onions, sour cream, crackers, Frito's....or whatever you like.

Corn & Cheese Chowder
It's been chilly the past few days and I thought a big pot of yummy soup would hit the spot. Friday after work, Katie and I stopped at the grocery store and picked up the ingredients to make Corn and Cheese Chowder...and to make it even better I bought some Ciabatta bread to use as bread bowls.
The soup was excellent....unfortunately I wasn't thinking and didn't take a picture for the blog. The original recipe came from Pioneer Woman; however I altered it a little. The recipe I have below is a combination of her recipe, my alternations, and what I'll do differently next time!
This is a really good soup and I can see us having this often. The only problem is that our local grocery store doesn't have a large quantity of bread so I was only able to buy two of the bread bowls....so if I wanted to serve several people I'd have to shop someplace else... or maybe I need to learn to make my own bread bowls.
4 slices of bacon, cut into small pieces
4 tablespoons butter
1 whole onion, diced
1 garlic clove, finely diced
12 sweet mini-peppers (red, yellow, orange) or 3 regular sized whole bell peppers, finely diced
2 (12 oz) packages Birdseye Steamfresh Gold & White Corn
1/4 cup flour
3 cups chicken broth
2 cups half and half
2 cups grated Monterrey jack cheese
1 cup grated pepper jack cheese
1/2 cup sliced green onions
salt and pepper
bread bowls (optional)
Place the 2 pkg of corn in the microwave and cook for 5 minutes. In a dutch oven, cook the bacon until it's crisp then add the butter and melt. Add the onion and garlic and cook for a few minutes. Then add the diced peppers and cook for a couple of minutes. Then add corn to the onion/pepper mixture and cook for a few minutes.
Sprinkle the flour evenly over the mixture, stir to combine. Stir in broth and stir well. Allow this to thicken for 3-4 minutes and turn the heat to low. Stir in half and half then cover and allow this to thicken/simmer for about 15-18 minutes.
Season with salt and pepper. Stir in cheeses and green onions. When the cheese is melted and it's all nice and hot, ladle out into the hollowed out bowels. Serve immediately and enjoy.

Post-Surgery Potato Soup
I had surgery on Monday to extract a stone in my kidney. It was a long day because the surgery didn't actually occur until 4 hours after it was scheduled. That night when I got home, I was thinking that a bowl of potato soup and some corn bread would really hit the spot.
I asked my friends on Facebook to send me good potato soup recipes but I didn't get their replies until after I'd already made my soup. But I plan on writing down their recipes and giving them a try. Here's how I made my soup. It was pretty tasty.
Potato Soup
Approx 5 lbs of Russet Potatoes, peeled and diced
2 cups of chicken broth
water
1/2 small red onion, diced really small
salt, pepper, Lawry's season slat, ground red pepper (season to your taste)
1 (8oz) block of cream cheese, cut into chunks
Place the potatoes, onion, spices, broth in a large pan. Then add water, just enough to barely cover the potatoes. Bring to a boil, then turn down to medium heat, cover and simmer until the potatoes are tender but not falling apart. Remove from heat and mash part of the potatoes. Then put the cream cheese chunks in and stir until melted. Taste and add more salt and pepper if it needs more.
The soup was really good and nothing fancy, next time I'll probably fry some bacon and put in it and maybe some cheese. But my tummy was still a little sensitive from surgery so I wanted something that would be soothing and comforting.

1 lb brown beans
Wash beans. Dissolve 3 tbsp of salt in water and pour over beans. (enough water to cover beans) Let sit overnight.
Next morning, chop up an onion and a few stalks of celery and add to the beans. Add some salt and pepper. Then throw in a pkg of smoked ham pieces (I bought a small package from the SuperCenter) Bring beans to a boil, stirring often, then reduce heat to a low simmer. Cook, stirring often until beans are tender. Add more salt and pepper to your taste.
