Trotter's Corn

Trotter's Corn

20 oz frozen corn
1/2 pint whipping cream
6 tsp sugar
1/4 cup milk
salt
pepper

Cook the above over low heat until hot then in a small dish mix:

2 tbsp. melted butter
2 tbsp. flour

Take the butter/flour mixture and stir into the corn and cook over low heat.

Baked Hominy & Cheese

Baked Hominy and Cheese

1 egg
2 can (15 oz) hominy
12 oz. Velvetta, cubed
3/4 cup cold milk
1/2 small onion, chopped
3 bacon strips cooked and crumbled
1 tbsp. butter
1/4 tsp pepper

In large bowl beat egg.  Add hominy, cheese, milk, onion, bacon, butter, and pepper.  Mix well.  Spoon into a greased 11x7x2 baking dish.  Bake at 350 for 45 minutes or until bubbly and top begins to brown.

Bacon Cheese Potatoes

Bacon Cheese Potatoes

8-10 medium potatoes
1/2 cup chopped onion
1 lb Velvetta, cubed
1 cup mayo
1/2 pound sliced bacon, cooked and crumbled
paprika
parsley

Peel the potatoes and place in saucepan.  Cover with water and cook until tender but firm.  Drain and cube.  In a bowl, mix potatoes with the onion, cheese, and mayo.  Transfer to an ungreased 13x9x2 baking dish.  Sprinkle with bacon.  Cover and bake at 350 for 30 minutes.  Sprinkle with parsley and paprika. 

(good served with ham)

Cream Peas

1 can of peas - drained
1 cup milk
1/2 stick butter melted
1 tbsp. flour
salt & pepper

Stir butter and flour gradually over med heat, add 1 cup milk and cook till thick.  Season with salt and pepper.  Add in 1 can drained peas and cook until hot.

Broccoli Casserole

Mom's Broccoli Casserole

1 small onion, chopped
2 cups minute rice
16 oz chopped broccoli (frozen)
1 can cream of mushroom soup
1/2 tsp salt
3 tbsp. butter
1/4 cup water
1/4 cup milk
1 8 oz jar cheese whiz

Cook rice and broccoli according to pkg directions.  Mix all ingredients together in casserole dish and bake at 350 for 35-40 minutes.

Easy Peasy Danishes

These are super easy and yummy....great for a lazy Sunday morning or taking to an office brunch.

Easy Peasy Danishes

Filling Ingredients
8 oz cream cheese, softened
1/3 cup powdered sugar
1 tsp vanilla or Mexican Vanilla
1 Tbsp milk

Mix until smooth.

Other Ingredients
1 can of crescent rolls
1 can of pie filling (cherry, apple, etc)

Take 1 can of crescent rolls ....you can do this in triangles, spread out and cut into circles, get fancy and shape like a wreath or  candy cane....however you want.

Spray a cookie sheet with cooking spray.  Put the crescent roll on the  cookie sheet.  Put a dollop (big) of cream cheese mixture on each crescent shape and then put a spoon full of pie filling.

Cook at 375 for about 14 minutes (watch, I almost overcooked mine).


When they come out of the oven, drizzle them with a glaze made from powdered sugar and a little milk.

Corn Dip

Corn Dip

2 (15 oz) cans whole kernel corn, drained
2 cups grated cheddar cheese
1 cup mayo
1 cup green pepper, chopped
1/2 cup red onion, chopped
1 (10.5 oz) bag coarsely crushed Frito chili cheese corn chips

Mix first 5 ingredients and chill. Stir in corn chips just before serving.

Tater Tot Casserole

1 1/2 pounds hamburger
garlic powder
onion powder
pepper
salt
2 can of cream of mushroom soup
1 can of cream style corn
milk
shredded cheese
frozen tater tots

Brown hamburger -- season with garlic powder, onion powder, salt and pepper.  Drain grease and stir in 2 cans of cream of mushroom soup and 1 can of cream style corn.  Add enough milk to make it creamy.  Pour in 9x13 pan and add cheese on top.  Top with tater tots, bake at 400 until tater tots are browned.
