Turkey Burgers

This is a quick and easy favorite when I'm on a healthy eating kick.

Turkey Burgers


1 pound ground turkey
1 egg white
1/2 tsp Worcestershire sauce
1/4 cup chopped onion
1/4 tsp garlic powder
1/4 tsp poultry seasoning
2 tsp Dijon mustard

Form into patties and fry.

Angel Food Cake Icing

This is the BEST icing for an Angel food cake -- take my word for it.

1 cup sugar
1 egg white
1 tsp vanilla
1/4 tsp cream of tartar
1/2 cup boiling water

Beat till still peaks form.  Put on angel food cake.  Cake must be refrigerated.

Grilled Ribeye Steaks

I like to keep it simple!

1-2 hours before grilling salt the steaks on both sides with kosher salt.

Set steaks out on counter about 30 minutes before grilling.

Start on cool side of the grill - cook until desired doneness.

This dough recipe is from Angie's mom -- and makes the most awesome cinnamon rolls, rolls, or can be used for king cake.

2 pkg yeast
2 1/2 cup water water (100-110 degrees)
3/4 cup vegetable oil
3/4 cup sugar
2 tsp salt
2 eggs, well beaten
8-9 cups flour

1. Dissolve yeast in warm water.  Let this sit for several minute until it almost bubbles over, took about 15 minutes in the my kitchen.

2. Pour yeast mixture into a large bowl.  Stir in sugar, beaten eggs, oil, salt and then start adding flour a cup at a time, until the dough is to stiff to stir by hand.

3. Add more flour and work with hands until dough is pretty stiff.

4. Pour a small amount of oil over the top of the dough and cover with a moist warm towel.  (If kitchen is cool, can use a heating pad covered with a towel and place the bowl on top.)  Let double in size. 

5 Punch down and make into cinnamon rolls or rolls.  Or king cakes (will make 4).

6. Cover and let rise again.  Then bake at 375 for about 30 minutes.

Cinnamon Rolls filling -- melt butter and pour over dough.  Sprinkle cinnamon and brown sugar.  Then roll and cut into cinnamon rolls.

Cinnamon Roll Glaze or King Cake Glaze
1 stick butter, melted
4 cups powdered sugar
3 tbsp. milk
1 tsp vanilla
1 tsp almond extract

King Cake Filling
2 blocks cream cheese, softened
1/2 cup sugar
1/4 cup brown sugar
1 tsp vanilla
2 tsp cinnamon
2 tbsp. maple syrup

Mom's Potato Salad

This is my Mom's recipe for Potato Salad....it's one of my favorites and it's always a favorite for potlucks or BBQs.

3 lbs potatoes
10 boiled eggs (save 2-3 to slice for garnish)
1 medium sweet onion, chopped
1/2 cup mayo
1/2 cup evaporated milk
3 tbsp. vinegar
2 tbsp. mustard
1/4 cup sugar
1 tsp salt
1/2 tsp pepper
Paprika (for garnish)

Boil potatoes.  Drain.  Cool.  Peel.  Cut into 1 inch chunks.

Separate 6 eggs from their yolks.  Chop whites and add to the potato chunks.  Smash yolks and all remaining ingredients.  Pour over potatoes and toss to coat.  Garnish with sliced eggs and paprika.  Chill several hours or overnight before serving.

Jalapeno Popper Dip

I had this dip for the first time at an Independence Day party last year.  It was awesome and I ate so much of it that I had to ask Sarah for her recipe.

Jalapeno Popper Dip

7 slices bacon- diced
1 cup mayo
1 cup cheddar cheese
1/2 cup mozzarella cheese
1/4 cup chopped green onion
5 jalapeno peppers, seeded & chopped
2 -8oz cream cheese blocks, softened

Topping:
1 cup crushed Ritz crackers
1/2 cup grated parmesan cheese
1/4 cup butter, melted

Preheat oven to 350

Mix in a 9 inch round baking dish.  Mix topping ingredients - spread over top.  Bake 20-30 minutes.

Bacon Wrapped Asparagus Bundles

These are a favorite Easter recipe, serve with ham, scalloped potatoes & deviled eggs.

1 bundle of asparagus, trimmed
bacon
olive oil
kosher salt
pepper
maple syrup

Preheat oven to 425 degrees.  Place a rack on a rimmed baking sheet.  Cut slices of bacon in half.  Wind bacon around a small bundle of asparagus.  Drizzle the asparagus with olive oil, make sure tips are well coated.  Season with salt and pepper.  Brush the bacon with maple syrup.

Bake about 30-35 minutes.

Nikki's Sugar Cookies

1 cup butter
1 1/2 cup sugar
3 eggs
1 tsp almond extract

Cream until fluffy.

Sift in:
3 1/2 cup flour
2 tsp cream of tartar
1 tsp soda
1/2 tsp salt

Mix well.  Chill for 3-4 hours.  Use plenty of flour in rolling out cookie dough.  Bake at 375 degrees for 6-8 minutes.
