Chocolate Gravy


A lot of people have never had chocolate gravy….and if they haven’t they usually turn up their nose and think I’m crazy…but my Dad used to make it for me as a kid on Snow Days.  I’ve not had it since I was a kid.  I'm not exactly sure how Dad made his gravy; it wasn’t quite as good as Dad’s but was pretty close.  I don’t know if his recipe was different or if’s just the memory of my Dad making it.

Chocolate Gravy

1 ½ cups milk

1-2 Tbsp Cornstarch – add a little at a time to thicken

2 tbsp cocoa

½ cup sugar
 

Cook on medium heat until it boils.  Boil & let thicken.  Remove from heat and add 1 tsp vanilla.
 

Serve on hot biscuits.

Turkey Salad Sandwich


Turkey Salad Sandwich
 

1 large can turkey breast, chopped

2-3 boiled eggs

Mayo

Salt & Pepper

Celery Seed – Not very much, I just sprinkled a very small amount in

Slivered Toasted Almonds

Dried Cherries


Mix the above in a bowl.  Serve on bread with Swiss cheese.  I had some “everything French bread” from the deli…I put some Swiss cheese on it and put in the oven for a few minutes until the bread started to taste and the cheese melted.  Then top with the turkey mixture and enjoy. 

Mom's Hamburger Soup


Hamburger Soup

1 pound ground beef

1 medium onion chopped

1 cup diced potatoes

1 cup sliced carrots

2 cups tomato juice

4 cups water

¼ cup cooked rice

¼ cup sugar


Brown ground beef and onion in skillet.  Drain fat.  Place in large plan with other ingredients.  Bring to a boil.  Simmer 1 hour or until done.


Good served with corn bread.  Or fresh homemade bread.

Hamburger Pie

1 lb ground beef

1 cup chopped onion

½ tsp salt

1 cup shredded cheddar cheese (or Mexican cheese blend)

1 cup milk

½ cup Bisquick baking mix

2 eggs

Heat oven to 400.  Grease a 9 inch pie plate.  Cook ground beef and onion in a large skillet until beef is brown.  Drain fat.  Stir in salt.  Spread in pie plate and sprinkle with cheese.


Stir remaining ingredients with a fork until blended and pour into the plate over the hamburger.


Bake 25 minutes or until knife inserted in center comes out clean.

Layer Salad

LAYER SALAD

In a large bowl, layer the following items

½ head lettuce, cut or torn into small pieces

Celery (I leave out because I don’t like it)

Diced onion

Chopped red bell pepper

Bag Frozen Peas

½ head lettuce, cut or torn into small pieces

Sprinkle with white pepper, tarragon leaves, parsley, and chives.  (or sprinkle with Fines Herbes from Penzeys and the white pepper)

Spread Buttermilk ranch dressing over the whole thing. (I make my own, using spices from Penzey’s spices and buttermilk and mayo)

Cover and place in the fridge over night.

Just before serving add cooked & crumbled bacon and some cheese.  (You can use any kind of cheese, I used the Mexican blend this time because it’s what I had on hand.  The other time I made it I used mozzarella)

Breakfast Casserole

I think I may have perfected my breakfast casserole recipe.  I made this for an office meeting and everyone loved it. 

I buttered the pan....big mistake because it stuck like crazy and I had to scrub and scrub and was tempted to throw the pan out the window.  Next time I'll try spraying with Pam cooking spray to see if that helps.

Breakfast Casserole

6 eggs
1 cup half and half
3 tbsp green onions, chopped
salt and pepper
1 tsp ground mustard
2-3 dashes of hot sauce
1 pound pork sausage
1 block cream cheese
2 cups grated cheddar cheese
1/2 stick butter
Texas toast

Preheat oven to 350.  Spray a 12x10 baking pan.  Line the pan with Texas toast, cutting pieces as needed to completely cover the bottom.

Cook the sausage and when almost done add the block of cream cheese and melt.  Stir and cook until melted.  Let cool slightly and then cover the bread with the sausage mixture.

In a small bowl, beat the eggs.  Add half and half. Add green onions, salt, pepper, ground mustard and hot sauce.  Mix well and pour over the entire pan.  Sprinkle with cheese.  Cut the butter into pats and spread over the cheese.  Cover with foil, put in fridge and let sit overnight.

Bake 30-40 minutes on 350

(double the recipe for a large 11x15 pan)
